

My kids are giving me a total complex.
I love the food I make. My husband tells me he loves the food I make. Just about all our friends who eat at our house tell me they love my food. (Wow, braggy much??)
Do my kids love the food I make? Nope. Strummer is a bit of an exception, but I have a feeling as he enters his impressionable preschool years the others will sway him into saying spinach is disgusting. So what’s a girl to do? The kids need to eat at least a few vegetables before they head off to college or their skin will fall off and they’ll be socially awkward and unable to find a job for the rest of their lives (that’s how the old wives’ tale goes, right?).
My plan: Cheesy green chile corn dip! Cover the vegetables in cheeeeeeese. They get a little calcium with their veggie vitamins and I get to eat cheesy corny chile goodness. Add homemade tortilla chips (I’ll try share that recipe soon!) and now we’re getting somewhere.

I have a couple kids who love to dip things. They even prefer whatever the dip is to what they’re dipping with, so I can give them a single baked tortilla chip and they will bite all their dip off that one chip.

Cheesy Green Chile Corn Dip
Ingredients
- 2 cups Birds Eye frozen corn,, thawed according to package directions
- 12 ounces queso quesadilla,, crumbed or shredded
- 4 ounces shredded monterey jack cheese
- 4 ounces canned mild diced green chiles
Instructions
- Combine all ingredients in a medium saucepan over medium heat. Allow the cheeses to melt, stirring frequently. Once everything is melted together remove from the heat and serve immediately with chips or serve over tacos, quesadillas, and more.

This dip looks so good and so easy to make! I have so much frozen corn in my freezer (from fresh corn) and I’ve been wondering what to do with it. I think I’ll make this cheesy dip!
