This Deep Green Sandwich is full of healthy, delicious ingredients!

How do you find inspiration?

I don’t know if it’s the new year or the long, cold winter, but I’ve been seeking (and finding!) inspiration all over the place lately. After spending so much time discovering who I am and working through my Whitney English planner, I’m finding there is much more I want to do creatively than I have time for in the day. Working through these materials has helped me figure out what exactly makes me happy, recharges my batteries, and should be filling my time.
Ultimately I want to be making more art (or, I should say, making art in the first place). I’m not sure how this will fit into my busy life or limited space and finances (paint is expensive!), but I’m currently filling my head with knowledge and inspiration as a first step towards making it happen. Holla at my local library for carrying enough books to give me a refresher course in art materials!

One of my favorite things I’ve done recently is create Pinterest boards for colors. There is something extremely satisfying to me about seeing tons of beautiful images matching in dominant tone. I spent an hour or so working on this and afterwards I was in a bit of a haze.
I felt like my senses were heightened and I was experiencing the world differently. Food smelled stronger, sounds were isolated, shapes were defined. I’m pretty sure my husband thought I was high. Speaking of colors, I made a green sandwich! Like a really green sandwich. This is one variation of my go-to lunch lately. I’m still nuts-o over avocados and insist on eating one every day whether I’m hungry or not. It’s just gonna happen.
When you smear it on toast with lots of leafy greens, a little salt, and some fresh veggies (carrot strips and sliced tomatoes would be an excellent addition) it becomes a salad on bread. Which is really the only way to eat salad, in my opinion.

Deep Green Sandwich
Ingredients
- 1 avocado, mashed
- 1 tablespoon fat-free feta cheese
- 2 teaspoons fresh lemon juice
- Coarse kosher salt
- 4 slices whole grain bread, such as Ezekiel bread, toasted
- 2 radishes, thinly sliced
- 1 cup Kale, spinach, spring mix, or any combination of the three
Instructions
- In a small bowl, combine avocado, feta, and lemon juice. Season lightly with salt.
- Spread the avocado mixture onto two slices of bread. Top with sliced radishes, leafy greens, and another slice of bread.

It’s such a good time of year to refresh and refocus – I’ve been doing the same thing. 🙂 I am on such a sandwich kick lately, and this one needs to go into rotation! Love how fresh and simple it looks.
