My September calendar is a little daunting. I’m over here taking deep breaths and planning some easy back to school dinners!
I’m obviously super into home cooked food, but maybe a little too much at times. It can be hard for me to turn off the idea that I need to be cooking from scratch every night. I’m trying to ease up on myself and schedule in a few times a week where I’m able to make dinner quick and easy while still making smart meal choices.
Conagra Brands sent me a few convenient foods to try and I wanted to share a few favorites with you! These will definitely have a spot on my meal plan in the next few months. Half the time you can find me using fresh vegetables, but the rest of the time it’s frozen veggies all the way. Serve these alongside my peanut crusted tofu, toss into a tempeh buddha bowl, or just pile a fried egg on top for a super simple meal.
I’ve been hearing lots of people talking about the Gardein Nashville Hot Chick’n Tenders, so I was super excited that they sent me some to try! They use a pea + wheat protein, and are certified vegan, non-GMO, dairy free, and kosher.

These meatless tenders are SO spicy! I’ve been on a huge spicy food kick lately, and it was kind of exciting not to have to add anything extra to these tenders to make them reach peak spiciness.
I love the possibilities of these spicy tenders. I plan to use them in salads, wraps, and melty sandwiches. They’d also be great next to some mashed potatoes or roasted veggies!

I haven’t eaten many frozen meals in the last few years, but I’ve been getting back into them now that we’re so busy in the evenings. I feel like the options have come a long way since I was in college. I’m obsessed with power bowls, so this Healthy Choice Falafel & Tahini Bowl was right up my ally!

This had crispy falafel, red onions, tomatoes, and a creamy tahini sauce on top of whole grains and leafy greens. The red quinoa, black barley, and kale combo made for a great flavor/texture combo.
This is the fastest meal option, perfect for those nights where I. just. can’t. after piano lessons, football practice, or gymnastics.
