These Larabar Chocolate Brownie Bites are full of wholesome ingredients, but taste just like brownies!

I’m crazy with ambition.
There are about a million things I want to do around the house and with my kids and on my blog and blah blah blah blah blah. I’m sure you know by now I don’t have enough hours in my day. For some reason I felt it necessary last week to photograph six recipes. I usually only share two a week here, so even though it was super hectic getting all that photography done, now I’m set for a few weeks! I look forward to using that free time to get outside and enjoy the weather with my kids.

I took to Facebook to see which recipe you all wanted to see first, and a healthy treat won by a hair. I look forward to sharing all these recipes with you in the weeks to come (there are some real home runs coming up!) but today you can have your brownie and eat it too.

These larabar chocolate brownie bites are so chocolatey and fudgy you won’t believe they’re actually good for you. Cocoa powder gives you all that chocolate taste without all the calories while the nuts and dates give you plenty of energy. I have a small army of copycat Larabar recipes growing here on the blog and if you only try one it should probably be this one.

Larabar Chocolate Brownie Bites
Ingredients
- ½ cup raw almonds
- ½ cup raw cashews
- 1 ½ cups pitted dates
- 1 teaspoon pure vanilla extract
- 3 tablespoons cocoa powder
- Salt
Instructions
- Place all ingredients in the bowl of a food processor and process until a sticky dough forms. If it seems dry add water a teaspoon at a time until it pinches together nicely between your fingers. Dump dough onto a sheet of wax or parchment paper and form into an even layer. Cut into bite size squares and store in an air tight container in the refrigerator for up to a week.
