
With two kids to care for during the day, it can be difficult to find time to exercise. I had finally found a series of exercise videos I liked doing on youtube, only to have them taken down for copyright infringement. I guess I could be a good person and just go buy them, but I’m looking for something a little low cost to do. In the meantime, I’ve had two babies and I love butter and sugar, so I need to do something to keep my physique in check. Until I find a new way to work out, it will have to be healthy eating.
I made a salad that tastes like pizza. Or a pizza that tastes like salad. I’m not sure which. Why does one sounds like a good idea and the other bad?
Be honest, you only like eating a salad if it has croutons on it. This pizza is like a big crouton with a salad on top.

Ripe tomatoes and onions are neatly layered on top of a whole wheat pizza dough brushed with olive oil. Mozzarella cheese gets sprinkled on and drizzled with more olive oil.
When the pizza comes out of the oven it gets topped with spicy arugula and a sprinkling of Parmesan cheese and crushed red pepper. Its melty, spicy, crunchy, healthy happiness.
Tomato, Onion, and Arugula Pizza
One pound whole wheat pizza dough
3 tablespoons olive oil
3 roma tomatoes, sliced thin
One small yellow onion, halved and thinly sliced
1 ½ cups shredded mozzarella cheese
2 cups arugula
Preheat oven to 425ºF. Spray a large baking sheet with cooking spray, or use a pizza stone.
Stretch pizza dough to fit prepared pan. Drizzle with two tablespoons olive oil and use a basting brush to spread it evenly over dough. Arrange tomatoes in a single layer and top with onions. Top with mozzarella cheese and drizzle with the final tablespoon of olive oil.
Bake in preheated oven for 10-15 minutes, or until desired crispness.
Top cut slices with a handful of arugula. Sprinkle with Parmesan cheese and crushed red pepper flakes if desired.
